Tea Guide
The common type of teas is the black, green, white, oolong and herbal infusions. Of late, people have taken a fancy for fruit teas.
In India, the most common type of teas used is the black and the green tea. Not many people know that all these teas come from the same plant, i.e., Camellia Sinensis, be it much sought-after green tea or the regular black tea that we used for making our 'chai' tea. The only difference is in their harvesting and processing method, which gives them a characteristic texture, size, and taste.
Black Tea
It is high in caffeine content, dark coppery, and strong flavored. The most common type of black tea available in India is the CTC tea, where the leaves are crushed, torn, and then oxidized. It is because of oxidation that the leaves turn dark in color and small granule-shaped, unlike the green tea which is long-leaved and green in color after steeping.
Most of the Black sea that we get in India is either from the northeast state of Assam or the southern region of Western Ghats.
Green Tea
It has taken a new high in India, among health-conscious people. Even though it has better health benefits as compared to black tea, it is derived from the same Camellia Sinensis plant from which black tea is obtained. Green tea is not free from caffeine but it has only 25% of the total caffeine present in black tea. Apart from low caffeine content, it is light-colored and even milder in taste. Due to its mild taste, it is not used to make our 'chai' tea but is suited best to mix with flower and fruit teas. Green tea is green in color and fully left due to minimal oxidation.
White Tea
It is the least processed tea and is obtained from the first two leaf buds of the plant, to get the best quality. The silver hair on the new leaf bud accounts for the tea's white hue. The connoisseurs of tea swear by it, as it is light-bodied and mild flavored.
Oolong Tea
It is partially oxidized, after the harvest and wilting process. Depending upon the type of tea one desires, it is oxidized to get a mild or strong flavor. The strength of tea depends upon the amount of oxidation it goes through-more oxidation.
Pu-erh Tea
It is similar to black tea in character but is partially fermented and is high in caffeine. Unlike other teas, Puerh tea is aged for about three years to improve its flavor. It is not very common in India. It is a specialty of China's Yunnan province. It is sold in the form of brick, cake, or dried loose leaves.
Herbal Tea
lt is a pseudo tea, i.e, it is not derived from the common tea plant. It is a blend of different herbs and spices and thus is free from caffeine. Since they are brewed and consumed in the same way as the 'true teas' hence they are called teas. These teas are often therapeutic in nature and are often used for treating different ailments like insomnia, depression, kidney problem, indigestion, cold cough, etc.
